| Fresh mushrooms | 100 g |
| Shallots - thinly sliced (for garnish) | 2 tbsp |
| Minced meat (pork or beef, as preferred) | 100 g |
| Shrimp - deveined | 200 g |
| Onion - thinly sliced | 100 g |
| Thai chilies - chopped (for garnish) | 3 -4 |
| Red bell pepper - cut into strips (for garnish) | 1/2 pepper |
| Roasted peanuts - chopped (for garnish) | 2 tbsp |
| Cilantro leaves - chopped (for garnish) | 2 tbsp |
| Spring onion - chopped (for garnish) | 2 tbsp |
| Nam Yam salad dressing (depending on desired heat) |  125 ml - 250 ml |

Thai glass noodle salad: Here's how it's done:
1. Cook the noodles: Bring 4 cups of water to a boil in a pot and add the glass noodles. Cook while stirring for about 5 minutes, until the noodles are soft. Drain and rinse with cold water. Cut the noodles into pieces about 15 cm long with scissors or a knife and set aside.
2. Prepare mushrooms: Clean the mushrooms and cut into thin strips.
3. Fry shallots and shrimp: Heat the oil in a pan over medium heat and fry the shallots until golden brown and crispy. Remove and drain on paper towels. Fry the dried shrimp in the same oil until golden brown; remove and set aside.
4. Sauté meat and shrimp: Add the minced meat, shrimp, and mushrooms and sauté until everything is cooked through. Alternatively, the meat, shrimp, and mushrooms can also be poached in lightly salted water.
5. Mix salad: In a large bowl, combine all ingredients except for the garnishes and add our Nam Yam sauce for glass noodle salad. Adjust the flavor with more or less of the dressing.
6. Serve: Place the salad on a serving platter and garnish (red bell pepper, peanuts, cilantro, spring onion, and Thai chili). Serve with fresh vegetables like cabbage and lettuce leaves.
