Thai Glass Noodle Salad: Here's how to make it:
1. Cook noodles: In a pot, bring 4 cups of water to a boil and add the glass noodles. Cook, stirring, for about 5 minutes until the noodles are soft. Drain and rinse with cold water. Cut the noodles into approximately 15 cm long pieces with scissors or a knife and set aside.
2. Prepare mushrooms: Clean the mushrooms and cut them into thin slices.
3. Fry shallots and shrimp: In a pan, heat the oil over medium heat and fry the shallots until golden brown and crispy. Remove and drain on paper towels. In the same oil, fry the dried shrimp until golden brown; remove and set aside.
4. Sauté meat and shrimp: Add the minced meat, shrimp, and mushrooms and fry until everything is cooked through. Alternatively, the meat, shrimp, and mushrooms can also be poached in lightly salted water.
5. Mix salad: In a large bowl, combine all ingredients except the garnishes and add our Nam Yam sauce for glass noodle salad. Adjust the taste with more or less dressing.
6. Serve: Place the salad on a serving platter and garnish (red bell pepper, peanuts, cilantro, spring onion, and Thai chili). Serve with fresh vegetables like cabbage and lettuce leaves.
