Deep-fried dumplings with minced meat (Kiew Tod - เกี๊ยวทอด)

In Thailand, deep-frying is practically a national sport – and this snack is particularly popular with children. It takes a little time, but it's straightforward and twice as much fun when made with two people or the family: working together to fill and fold means you'll finish much faster. The classic Thai Sweet Chili Dip Nam Jim Gai pairs perfectly with it. The dumplings can be deep-fried in oil or cooked until crispy in an air fryer.

Ingredients for 32 Kiew Tod pieces

Just follow our cooking instructions.

Wonton wrappers (frozen)
approx. 32 pieces
Garlic cloves 3 pieces
Coriander root 3 pieces
Spring onion 1 piece
Minced meat (pork, beef, turkey) 400 g
Light soy sauce 3 tbsp
Fish sauce 3 tbsp
Coconut blossom sugar 1/2 tsp
Freshly ground white pepper 1 tsp
Toasted sesame oil 1 tsp
Panko (Asian breadcrumbs) 15 g
Oil for deep-frying

Preparation of the dumplings

  1. Thaw the wrappers
  2. Peel the garlic, wash the coriander root, and chop both as finely as possible.
  3. Clean and wash the spring onion, halve it lengthwise, then chop it as finely as possible.
  4. Mix garlic, coriander, spring onion, minced meat, soy sauce, coconut blossom sugar, and sesame oil well in a bowl and season to taste.
  5. Fold in the panko and let it soak for 10 minutes.
  6. Place the wonton wrappers one by one on the work surface (starch-dusted side up).
  7. Brush 2 adjacent sides of the wrappers thinly with water. Distribute 12-14 g of minced meat filling in the center of the wrappers and fold diagonally over the filling to form a triangle.
  8. Place the unmoistened sides on the moistened sides. Press the edges firmly together, pressing out any trapped air during folding if necessary.
  9. Heat oil or fat for deep-frying to 180°C and fry the dumplings in batches for approx. 1 minute on each side.
  10. Alternatively, air fry at 180°C until golden brown and crispy (turn occasionally).

Serving suggestion

The finished dumplings are perfect for dipping. You can use either our Tamarind Dip Sauce Nam Jim Look Chin or our Sweet Chili Sauce.

Yak Thai Tip

When buying from an Asian market, make sure to choose wrappers specifically labeled for deep-frying, not for soups. Frying wonton wrappers are usually a bit thinner and puff up more beautifully and airily in oil.
