Khao Pad Nam Prik Narok: Fried Rice from Hell
Khao Pad Nam Prik Narok is fried jasmine rice with the dry, intensely hot Nam Prik Narok chili paste. The seasoning gives the rice a reddish color and provides a strong aroma with a distinct kick. Nam Prik Narok can be translated as "chili paste from the underworld" or "chili paste from hell".
Ideally, cooked rice from the previous day is used, because the grains remain dry and loose when the rice is completely cooled. Those who prefer a less "hellish" heat should start with less Nam Prik and add more when serving.

Preparation
- Loosen the jasmine rice. Peel and finely chop the garlic. Cut the Chinese cabbage into bite-sized strips.
- Mix the light soy sauce, fish sauce, and Golden Mountain Sauce in a small bowl.
- Heat the vegetable oil in a wok or large pan over high heat. Fry the garlic in it until fragrant.
- Add the Nam Prik Narok and fry briefly until its aroma is released.
- Add the rice to the wok and mix thoroughly with the Nam Prik until it is evenly colored red.
- Fry the rice for 2-3 minutes, stirring constantly, and break up any clumps.
- Fold in the Chinese cabbage and fry briefly. Add the sauce mixture and mix everything thoroughly until the rice has absorbed the sauces.
- Serve the Khao Pad Nam Prik Narok immediately while hot and sprinkle with a little more Nam Prik Narok to taste.
