What is a Curry Paste?

Curry paste is the foundation of every Thai curry and one of the oldest techniques in the country's cuisine. It consists of fresh or dried red chilies, garlic, shallots, lemongrass, galangal, coriander roots, coriander and cumin seeds, and, depending on the variety, turmeric, lime leaves, and shrimp paste. The ingredients are pounded, not pureed, to release their essential oils. This is what gives them their vibrant colors and aromatic depth, which no spice powder can achieve.

We produce our curry pastes fresh, in small batches, and without fillers. This is why our pastes taste significantly more intense than industrial pastes. Therefore, an opened jar should be stored in the refrigerator, covered with a neutral oil.
