Khao Pad Sai Ua – Fried Rice with Spicy Sai Ua
One Sai Ua sausage is enough for a whole pan of fried rice because the sausage already brings its own curry paste. In Northern Thailand, this is a popular dish made with leftovers.
The second sausage from the pack of extra spicy Sai Ua goes on the grill.
Ingredients for 2 servings of Khao Pad Sai Ua
Preparation time: approx. 20 minutes
| Extra spicy Sai Ua | 250 g (1 sausage) |
| Cooked jasmine rice from the day before (approx. 150 g uncooked) | 400 g |
| Eggs | 2 |
| Garlic cloves, finely chopped | 3 |
| Onion, sliced | 1 small |
| Spring onions, sliced | 2 |
| Fish sauce | 1 tbsp |
| Sugar | 1 tsp |
| Neutral oil | 2 tbsp |
| Cucumber slices and lime wedges | as desired |
| Namprik Pao | optional |
How to prepare Khao Pad Sai Ua
- Heat the oil in the wok and fry the sausage over medium-high heat for 3–4 minutes until lightly browned. Then remove and cut into pieces.
- Add the garlic and onion and fry for another 1 minute.
- Push everything to the side, crack the eggs into the center, let them set briefly and roughly stir.
- Add the rice, break up any clumps with the spatula and fry for 3–4 minutes over high heat.
- Season with fish sauce and sugar. Taste first: The sausage is already strongly seasoned and very spicy.
- Fold in the spring onions and serve immediately.
How to serve
Arrange on a plate with cucumber slices and lime wedges on the side. The cucumber cools the heat, while the lime juice makes the rice fresher. If you like it even more intense, add a teaspoon of Namprik Pao.
