Luk Chup Recipe - A Thai delicacy to make yourself

Thai cuisine is one of the most delicious cuisines in Asia, known for exotic spices and ingredients.
When you think of Thai food, curries, Pad Thai, or Tom Yum soups immediately come to mind. However, there's one Thai dessert you should definitely try if you have a sweet tooth: Luk Chup. Luk Chup is a type of Thai sweet consisting of delicate mung bean puree that resembles small pieces of fruit or vegetables. In this post, I'll show you how to make and enjoy Luk Chup at home.
To prepare Luk Chup, you need the following ingredients:

- 1 kg peeled mung beans
- 800 g white sugar
- 500 ml coconut milk (for desserts, not regular coconut milk)
- ¼ teaspoon salt
- 50 g agar-agar powder + 200 g white sugar – 1.5 l water (gels)
- Food colorings

Here's how:

Step 1: Prepare mung beans

1. Place the peeled mung beans in water and let them soak for about an hour.

2. Place the beans in a kitchen strainer or cheesecloth and close the lid. Then steam the cloth over boiling water for another hour, until the beans are soft and fragrant.

3. Remove the beans from the cloth and crush them into a fine paste.

Step 2: Cook the dough

1. Put the bean paste in a pot and add sugar, salt and coconut milk.

2. Cook the dough over low heat for one hour, stirring frequently to prevent it from burning.

3. Let the dough cool, then shape the Luk Chups. We have small silicone molds for this :-)

Step 3: Paint Luk Chup
1. If you want, you can paint the Luk Chup balls with some color to make the little fruits look great.
To do this, use food coloring and carefully paint each ball.

2. Let the painted Luk Chup balls dry before covering them with gel.
Step 4: Make gels

1. Mix 50 g of agar-agar powder and 200 g of sugar with 1.5 l of water in a pot.

2. Bring the mixture to a boil and cook it for 15 minutes at 100°C.

3. Let the gelatin cool slightly and add the Luk Chup balls – which you previously skewered on shish kebab skewers – and after a short time, remove them from the gelatin to dry.
