Pad Prik King Moo - Crispy pork skin in red curry

Crispy pork skin 200 g
Fresh ginger 3 slices
Kaffir lime leaves 2 -3
Red chilies (fresh) 1 - 2
Dried shrimp 2 tbsp
fish sauce 2 tbsp
Red curry paste 100 g
Coconut sugar 50 g
vegetable oil 250 nl

Preparation of Pad Prik King Moo with red curry paste

  1. Crush the shrimp in a mortar and pestle, then add the ginger slices and curry paste and crush again.
  2. Heat the oil in a pan and fry the prepared red curry paste until it smells intense.
  3. Add sugar and fish sauce to the pan and stir constantly until the sugar has melted.
  4. Then add the pork skin and mix.
  5. Garnish the finished dish with fine strips of kaffir lime and chili strips.

Without coconut milk: Unlike many other Thai curries, Pad Prik King is prepared without coconut milk. This makes it drier and more intense in flavor.
