Yam Gun Chiang - Thai sausage salad

Yam Gun Chiang is one of our favorite Thai dishes. It's a traditional classic in Thailand and very popular with young and old. It's eaten there at any time of day—even for breakfast. It's a portion of deliciously aromatic pork sausage, which unfolds its sweet aroma particularly well when briefly stir-fried. Spicy ingredients like chilies and onions, combined with delicate, caramelly notes of brown sugar, give the salad its exceptional flavor.

Here we'll show you how to easily and comfortably prepare this traditional salad at home. Eat it on its own or enjoy it with rice. For those who like it spicier.

Ingredients for 2 - 3 servings of Yam Gun Chiang

Preparation time 20 minutes

Gun Chiang Sausage 200 g
Spicy Thai chilies 5 - 10 depending on sharpness
Red onion 1
Coriander stalks 2
leek 2
lime juice 2 tbsp
fish sauce 1 tbsp
cane sugar 1 tbsp
Vegetable oil 2 tbsp
Thai basil leaves 2 -3

Preparation of Yam Gun Chiang:

  1. Cut the Gun Chiang diagonally into thin slices.
  2. Cut all other ingredients into small pieces.
  3. Heat two tablespoons of oil in a pan over low heat.
  4. Add the sausage slices and increase the heat to medium. Depending on your preference, you can brown the sausage more or less. Once you're satisfied with the result, remove the sausage from the pan.
  5. Mix the brown sugar, fish sauce, and lime juice in a large bowl and add the cooked sausage slices and all the other ingredients.
  6. Mix all the ingredients with the exotic dressing, garnish the dish with the basil leaves and the Yam Gun Chiang is ready to serve.

Chinese sausage: "Gun Chiang" (กุนเชียง) is the Thai pronunciation for Chinese sausage (Cantonese: "Lap Cheong"). This sweet and spicy sausage was brought to Thailand by Chinese immigrants and is now an integral part of Thai cuisine.

Yam = salad, but not like in the West: In Thailand, “Yam” (ยำ) refers to a hot and sour type of salad that is usually dressed with fish sauce, lime juice, chili and sugar – quite different from Western salads with lettuce and dressing.

Hot or cold: Yam Gun Chiang can be served hot or at room temperature. The sausage is usually briefly fried to intensify its flavor before being mixed with onions, herbs, and dressing.

As a side dish or snack: Yam Gun Chiang is often served as a side dish to rice dishes or as a snack with beer – especially popular at parties or in social gatherings.
