Sai Ua, also known as Northern Thai Sausage, is a type of sausage popular in the northern region of Thailand. It is made from pork and a generous amount of fresh spices such as lemongrass, galangal, garlic, and makrut lime leaf. The sausage is complex, rich in flavor, and extremely aromatic.
The addition of turmeric not only gives the sausage a vibrant color but also contributes to its earthy flavor. Once the ingredients are thoroughly blended, they are traditionally stuffed into natural casings, creating the classic sausage shape.
The sausages can be grilled, pan-fried, or cooked over an open flame, resulting in a slightly crispy and charred exterior that contrasts beautifully with the tender and flavorful interior.
Sai Ua is often enjoyed as a delicious appetizer or main course, accompanied by sticky rice, fresh vegetables, and sometimes dipping sauces. Its complex flavors and regional charm make it a popular culinary gem, both within Northern Thai cuisine and among those seeking authentic and flavorful dishes.
