Dried Birds Eye Chilies | 2 pieces |
Dried red Thai chilies - mild (Chifa) | 6 pieces |
Shallots alternatively red onion | 3 tbsp |
garlic cloves | 2 tbsp |
Galangal | 1 tsp |
Ginger | 1 tsp |
Salt | 1 tsp |
Lemongrass | 1 tbsp |
cumin | 1 tsp |
Coriander seeds | 1 tbsp |
Turmeric powder | 1 tsp |
Preparation of yellow curry paste (Gaeng Curry)
- Prepare chilies: Soak the dried chilies in warm water for about 15 minutes, then drain.
- Chop ingredients: Chop the shallots, garlic, lemongrass, galangal and ginger.
- Unleash roasted aromas: Lightly roast shallots, garlic, galangal, ginger, cumin, and coriander seeds in a pan without oil until fragrant. This intensifies the aromas and adds depth to the flavor.
- Mortars: First, finely crush the roasted spices, then gradually add the remaining ingredients and process into a paste.
- Shrimp paste – Optionally, you can add shrimp paste and grind it into the paste. This will give the paste even more depth of flavor.
