Recipe for Green Thai Curry Paste – Fresh, intense and completely without additives
Thai green curry paste —or "Krueang Gaeng Khiao Wan" in Thai—is the aromatic centerpiece of many classic Thai dishes. Its fresh spiciness, combined with herbs and spices, makes it the perfect base for green curries with vegetables, meat, or tofu. Anyone who's ever tried a homemade paste knows: it's worth the effort!

Ingredients for 2–3 curries

Green Thai chilies (fresh) - mild | 4 pieces |
Green Thai chilies (fresh) - hot | 10 pieces |
Shallots alternatively red onion | 1/2 piece |
garlic cloves | 2 pieces |
chopped galangal | 1 tbsp |
Lemongrass | 1 stem |
Coriander seeds | 1 tsp |
cumin | 1 tsp |
White peppercorns | 1/2 tsp |
Coarse sea salt | 1 tsp |
Shrimp paste (optional) | 1/2 tsp |
Coriander root | 3-4 stems |
Kaffir lime peel | 1/2 tsp |
Preparation of the curry paste
- Preparation: Roast the coriander seeds, cumin, and peppercorns in a pan without oil until fragrant. Then let them cool.
- Cut: Roughly chop the chilies, shallots, garlic, lemongrass, galangal, and coriander root. Finely slice the kaffir lime peel.
- Mortars: First, place the roasted spices in a mortar and pestle and grind them finely. Then add the salt, chilies, shallots, garlic, galangal, lemongrass, and coriander roots—each thoroughly ground and blended.
- Finalize: Add the shrimp paste and grind it – and your green curry paste is ready!
